Ingredients
  

  • 1 cup brown sugar
  • 2 whole eggs
  • ¾ cup coconut oil or vegetable oil
  • ½ cup Greek yogurt
  • 1 teaspoon vanilla
  • 1 cup mashed bananas A little more, a little less, doesn’t hurt anything
  • ½ cup chopped walnuts
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups flour
  • 1 cup granola of your favorite granola
  • ½ cup banana chips sold with the dried fruit

Instructions
 

  • Preheat oven to 375.
  • Grease your pans.
  • Mix together sugar, eggs and oil. Add yogurt and vanilla. Add bananas and walnuts. Combine flour with baking powder and baking soda. Stir into banana mixture. Last, stir in the granola and banana chips.
  • Bake for 45 minutes. Let cool on a rack. Slice and toast-or just eat. But make sure to enjoy!

This banana bread is dense and perfect for toasting. Adjust banana amount as preferred for taste and texture.
