Salad Ingredients
- 5 oz spinach
- 1 heart romaine chopped
- 0.5 small red onion thinly sliced
- 4 medium radishes thinly sliced
- 1 pint blueberries
- 1 medium avocado diced
- 4 oz goat cheese crumbled
- 0.5 cup pistachios
Honey Mustard Vinaigrette
- 0.25 cup olive oil
- 0.25 cup dijon mustard
- 2 tablespoons honey
- 2 cloves garlic minced
- 3 tablespoons apple cider vinegar
- salt to taste
- black pepper to taste
Preparation
In a small bowl or jar, whisk together the olive oil, dijon mustard, honey, garlic, and apple cider vinegar. Season with salt and black pepper to taste. If using a jar, seal the lid and shake until well combined.
