Ingredients
  

For the Bagels

  • 3.5 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoon instant yeast
  • 1 teaspoon salt
  • 1 cup warm water
  • 2 tablespoon olive oil

For the Filling & Topping

  • 6 slices cooked bacon crumbled
  • 1 cup shredded sharp cheddar cheese
  • 4 oz cream cheese softened
  • 1 egg beaten for egg wash
  • extra cheddar for sprinkling on top

Dough Preparation

  • In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy. Stir in flour, salt, and olive oil to form a soft dough. Knead for 5–7 minutes until smooth and elastic.
  • Cover dough with a towel and let rise in a warm place for 1 hour or until doubled in size.
  • Mix cream cheese, crumbled bacon, and shredded cheddar in a bowl.
  • Punch down dough and divide into 8 equal pieces. Roll each piece into a ball, then flatten slightly. Place a spoonful of filling in the center and fold dough over, sealing edges. Shape into bagels.
  • Bring a pot of water to a boil. Boil bagels for 1–2 minutes per side, then remove and drain.
  • Preheat oven to 400°F (200°C). Brush bagels with beaten egg and sprinkle with extra cheddar if desired. Bake for 20–25 minutes until golden brown.
  • Let cool slightly before serving warm.

Notes

For softer bagels, brush with melted butter right after baking. You can add chopped green onions or herbs to the filling for extra flavor. If you prefer no-boil bagels, skip the water bath — they’ll still bake beautifully, though slightly less chewy. Store leftovers in an airtight container or freeze for up to 2 weeks.
