Bread Ingredients

  • 1 pound loaf of bread, crusts removed torn into 1- to 2-inch pieces (8 to 10 cups)
  • ½ cup extra-virgin olive oil
  • kosher salt to taste
  • black pepper to taste
  • 4 tablespoons unsalted butter
  • 2 cups sliced onions (from 1 to 2 onions)
  • 8 ounces kale rough stems discarded, leaves sliced into ½-inch ribbons
  • 1.5 cups homemade or store-bought chicken stock
  • 1 whole egg
  • softened butter for greasing the pan

Cooking Instructions

  • Preheat the oven to 400°F. In a large bowl, toss the bread with ¼ cup of the oil; season with salt and pepper to taste. Toast bread on a sheet pan in a single layer for 15 to 17 minutes, until golden. Set aside to cool briefly.
  • In a large sauté pan, melt the butter with the remaining ¼ cup oil over medium heat. Add the onions, season with a pinch of salt, and cook, stirring, for 15 to 20 minutes, until soft and beginning to caramelize.
  • Place the kale in the reserved bowl, add the caramelized onions, and toss to combine. Add the bread, 1 cup of chicken stock, ½ teaspoon salt, and fresh pepper, and mix well. Adjust seasoning as needed. Whisk the remaining stock with the egg and add to the mixture. Toss to combine.
  • Grease a 9×13-inch baking pan with softened butter and spread the mixture into it. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 to 20 minutes until golden and crisp. Let stand for 10 minutes before serving.

Notes

Freezing/Baking Instructions: Freeze uncooked after transferring to the baking pan covered with foil for up to 3 months. To bake, preheat oven to 350°F and bake covered directly from freezer for 1 hour. Increase temperature to 400°F and bake uncovered for 15 to 20 minutes.
