Chicken Thighs

  • 3 pounds chicken thighs, bone-in, skin-on, fat trimmed
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon kosher salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon paprika
  • 1 teaspoon freshly cracked black pepper

Preparation

  • Preheat the oven to 450°F. Line a rimmed sheet pan with foil and set a cooling rack inside.
  • Pat the chicken dry with a paper towel and drizzle with the olive oil.
  • In a small bowl, combine the salt, garlic powder, onion powder, paprika, and pepper. Rub the chicken all over with the spice mixture, completely coating the skin.
  • Reduce the oven temperature to 425°F. Place the chicken on the prepared rack and bake until the chicken is cooked through and the skin is crispy and the internal temperature of the chicken reaches 165°F on an instant-read thermometer, about 30 minutes.
  • Arrange chicken thighs on a platter and serve alongside your favorite sides.
